Astana team of chefs win competition of Russian cuisine in Moscow
ASTANA. KAZINFORM - A team of chefs from the capital's restaurant "Traditional" became the best at the competition of Russian cuisine held in Moscow.
Kazakhs were ahead of 28 teams and won, for the first time ever, "Russian PIR" Restaurant Cup, reported the newspaper "Express K".
"We are confident that Kazakhstan has great potential for the development of hospitality and service. In Moscow we have presented our city, our restaurant in the best lights. I think our victory is an inspiring example for our colleagues from all over Kazakhstan", shared his impressions Director of the restaurant Vladimir Dizendorf. A chef Vitaly Kosenchuk lifted the veil of secrecy over the gastronomic ingredients needed for success. "At the contest we chose the theme "Fishing", and our main task was to create relaxed, casual, and elated atmosphere. We decided to focus on the age-old Russian products, which have been, unfortunately, unjustly forgotten. We cooked the Russian cold appetizer - pike, boiled in anisette, and successfully complemented by pike caviar, dyed with vegetable juices in bright colors. The main dish surprised the jury, we have cooked the sweetbread meat (also called throat, gullet, or neck), said Vitaly Kosenchuk. "This highly authentic product in is considered in our country as a waste product. However, in Europe it is known not less than the legendary foie gras. But if cooked according to traditional recipes the sweetbread (or thymus) may become a gastronomic hallmark of Kazakhstan", concluded V.Kosenchuk. ‘Russian PIR' Restaurant Cup is the largest Russian cuisine restaurants' competition within the PIR Expo exhibition. The contest is aimed to develop Russian culinary traditions and to give an opportunity for ideas and experience exchange.
